D700 is absolutely a fine camera, but skimming through ebay also showed that a 5D mk2 goes for about the same sort of pricing.
Then it becomes a contest of features.
D700 gets you (slightly) better low light performance on account of less megapickles as well as give you many more focusing points and one shot higher burst shooting rate.
The 5D Mk2 on the other hand gets you a considerably higher megapickle count along with video capabilities (D700 is strictly a stills camera, you get 1080p recording with the Canon as well as an external mic input)
