When you take away colour from a picture you can't rely on it anymore to attract the viewer's eye, therefore it must have a solid composition or a very rich subject, or both. Once you learn how colour filters affect B&W photos it only makes it more interesting, challenging and rewarding.
I used to think the way you do, then I tried it as a way to improve my technique and to train my eyes to look for certain things. Now I only shoot monochrome.
