The first and most impressive is their technique to expand dynamic range by sampling different exposures from the sensor and merging them into a final photo or video. It's very elegant and can work with 4K video.
Next, Apple has really clever scene correction algorithms that adjust exposure and color according to what is in front of the lens. Is there a face? How is it lit? What about the even-ness of skin tone? What about the colors in the rest of the scene? Are they consistent? The iPhone answers these questions for you. Their algorithms have been trained on "good photos" and help the iPhone photographer make appealing images with little skill.
Finally, Apple recently released "Deep Fusion" which is a marketing term for sampling and layering techniques that create sharper and cleaner pictures. It's neat stuff and is likely something we will see more of on DSLRs.
To sum this all up, photography is dead and technology has killed it. In 10 years, a bunch of footage from a wedding or event (captured by the attendees or an assortment of surveillance or professional cameras) will be recomposed into a full three dimensional scene by a computer. An AI better than any photographer will select the perfect moments and create a beautiful video. Facebook will be allowing you fly through moments of your life like spectator view in an FPS. All they will need is some video from various sources and they can recompose reality as it was.
This stuff isn't scifi anymore.
