As far as video goes, 4:3. 1:1 is kind of rare to come by, but 4:3 is something most people are used to and can fit a lot more content than 16:9.

Yeah I know I know. I didnt knoe that when i purchased it and none of my printing places do large sizes for 4:3, so I have to crop all my pictures (i frame for 3:2 and edit the raws after)

I love to shoot 1:1 even though it's nothing but a gimmicky Instagram whore ratio.
Always weird to find out how most camera manufacturers don't include this ratio in their products.

Honestly I just use the pre designated setting on my camera can somebody point me to a video that will spoon-feed the knowledge on why this is important

It isn't important at all but can be fun and make for a more challenging experience. Realistically you should always shoot in the ratio of your sensor since the camera will also crop from there if you pick say 1:1 except you have full control afterwards what square to pick yourself.

Depending on your composition, if you composed the photo at a certain aspect ratio, another ratio might not work.
When you compress photos it will be more accurate at the same aspect ratio.
And apparently there's a subconscious feeling of when you compose the photo at a certain ration it won't look "right" in a different one, analogous to seeing your reflection and then seeing a selfie or whatever that flips it back.

Different ratios lend themselves to different compositions. For example shooting a wide angle landscape with a boxy ratio can create a ton of dead space at the top and/or bottom of frame. Conversely shooting a portrait with a wide ratio can include unwanted amounts of the environment. Of course this is all dependent on what you want your shot to be, but it is a tool you can use.

At my job, I'll crop to whatever the client needs (print, web). For my personal, more "artsy" stuff, I'm very fond of the academy ratio (1.375:1). Then again I'm a huge Wes Anderson fan and fell in love with that aspect (and colors) he uses.

Does aspect ratio even matter? I usually just crop the image to whatever looks best, although I do try to avoid very tall or wide images.

1:1 is nice but I never use it. I like 3:4 over 2:3 but I like 3:2 over 4:3. I sometimes crop to 16:9 to focus in on a better part of a landscape. I don't think I really have a favorite.
