Every stop you go up reduces dynamic range by 1 stop, because it reduces signal to noise ratio by 1 stop. You may be able to gain a third of a stop using a "dual gain" design but that's it.
If you want more latitude in the highlights, you expose for the highlights at the lowest iso you can get away with.
