Most people are right that as far as compression/dof its all basically equivalent.
The main reason you should use a medium format system is the color science on SOME backs/cameras.
Sorry but for what ever reason, most sensors/color science just SUCK at skin tones, ESPECIALLY for black people, probably because almost all skin tones are contained in some tiny beige/brown range. As soon as you push the image, the skin tones are ALWAYS too red, or become ORANGE, have weird banding or other problems. This applies to almost every format, FF, APS-C, MF.
The only systems that did not exhibit these problems were LEAF and HASSELBLAD backs. For what ever reason PHASE has shit color science even when using the same sensor. I got to rent a p65+ and H4D-60 a few years ago. Exact same sensor. The phase color science was SHIT. Skin tones waaaay to red.
Every Hassy or LEAF back I have used gave superior and unmatched skin tones. This also applies to FOOD as well if that is important to you.
For certain photographers, the cost and trade off for this one aspect are worth it
