Been shooting with Sony, Nikon and Canon for a while. My bias is as follows.
For stage 1, what you should care is the sensor and the lens. For getting a rough idea of what you are getting into visit dxomark. Select a sensor (and therefore the camera) based on the score and money at hand. Similarly get a set of lens based on your work. My generic suggestion = Nikon D780 + Tamron 24-70mm f/2.8.
For Stage 2, you can use any program that can organize the raw photos into libraries. My suggestion include ( fastone image viewer, nikon transfer utility, or Lightroom)
For Stage 3, the industry standard is lightroom. But I am going to be a bit controversial and going to suggest the free softwares Nikon Capture NX-i + Nikon Capture Nx-d (This works for only Nikon Cameras) {The NP3 version of picture profiles get renditions of the raw files that the Lr can't even reproduce.}
So I suggest OP to download samples of Nikon d780 raw and process them using Nikon Capture NX-d (using the NP3 profile in auto (fine tune it to your taste)
