What's the best GR model anons?
I'm tossing up between 2 or 3. 3 having no flash seems like a deal breaker but this is my first camera, so I'm not sure

The GR3 is smaller and that is better. You can add an external flash if you need one. But if you need more than you should not buy a GR in the first place.

Ah yes any other modern production camera that can be easily replaced or find parts for if need be. Not trying to spend $1000 every time a button breaks on my 20 year old camera.

The real question is:
Do you realy want a fixed lens camera as your first (and probably for a long time only) camera?
An APS-C mirrorless camera with a pancake lens has about the same size, but you have the option to mount different lenses when needed.
