90% of the time, C3 is my full-manual mode, including manual ISO. Mainly, I use this for when I'm working with off-camera flash, but I also use it when I'm working with high-contrast light and for when I'm using my Canon as a light meter for old film cameras.
When I'm using C3 like that, I usually also have C2 as aperture-priority-no-flash, which I use for things like when the model leaves the room I have the flashes set up in to put on makeup.
I also sometimes use the C modes for things like a slow shutter speed if I'm shooting a show where sometimes I want motion blur to show the performers as not-static.
