You can thank noise autists for that.
In the quest for ever lower noise, they gimped the Bayer CFA so it lets more other colors thorugh per subpixel, leading to worse color separation.
With a modern Bayer sensor, you can never get the color accuracy you should get.
You can't fix it in post either because the color information just isn't there.
