I don't have the space in my home to set up a darkroom and store chemicals and stuff. I'm more than happy to trust a reputable lab to develop the film for me to spec.
Raw image formats are incomparable. You can't develop a single frame of film, and you can't really do much to adjust development in real time - you just have to effectively follow a recipe and hope the result is good. With raw, it's much more of an adjustment in post, seeing the effects in real time, in a non-destructuve way, giving you flexibility with adjusting colour, highlights and shadows, tone curves and much more.
SOOC jpeg isn't really comparable either, since SOOC often gives very satisfactory results when you've managed to expose something perfectly. There are times when a SOOC jpeg looks way better than an unedited raw. And there are times that a SOOC jpeg looks like crap and you're going to have to spend time in post with the raw.
