Sony shooters probably do it cause they can. People with different sensor tech will feign not needing highlights or act like they can always get every exposure perfect in the camera without modifying in post at all, which is patently untrue for *any* scene that has wider dynamic range or any strong light sources in it.
You could ask why film shooters over expose everything and the answer would be the same. They want to maximize dynamic range in your shots by exposing in a way that best does so. There's nothing wrong with it and I don't care what you shoot on. Blown highlights look like ass.
