Now, mind you, I've upgraded from aps-c, so my personal experience is coming from crappy EVF's anyways, so I find it "acceptable"/comparable to the a6400 I had first.
my friend also owns a a7iii who's EVF blows it out of the water, so if you "revert" from a FF body to the a7C FF body, you will be extremely aware of how crap it is.
My major reasons I didn't go a7iii:
-travel size was at the forefront of my decision.
-better color science, sony put in their new color system into this one. It does not have the same colors as the a7iii
-better AF
-I never used more than 1 custom button on my a6600 anyways, so it isn't a deal breaker for me. I can use the 'record' button as a custom button which serves my purpose (i use it for the electronic evf zoom when a manual lens is attached)
Otherwise, if you're really playing with all the settings and dials, you may just miss your shot. Or if you aren't going to miss the shot because its scenery, I spend a few more seconds in my custom favorites menu to update a setting.
Having a simpler setup on top sometimes can be a positive. Less shit to deal with.
Also, I was able to check the new Tamron lens before it released. Putting a megalarge Tele-lens on a smol body is probably a negative. It's absolutely workable, but ergonomics are not awesome.
I have a half-case on my camera for better grip and even then it was not the best experience. There is no Front Curtain Shutter on the A7C either. Actually that alone might be a deal breaker for more people than the EVF.
