I want to record PoV videos while walking through the city and other places. What do I use to record and how should I mount it?

My first idea is gopro on my chest or something idk

You could try one of the new black tiny gopro's on a backpack strap then you won't stand out as much. You could also get a button camera, they replace a button on your shirt and are virtually invisible, idk If they have good quality though.

How *PoV* do you want it to be, and how watchable do you want the video to be for others?
Mounted on your head may be more accurate, but motion sickness inducing to viewers because you move your head around a lot.
Chest mounted to clipped to a backpack strap will be more watchable, but the angle will be largely fixed and you’ll need to remind yourself to turn your body instead of just your head.
