Here's the big things you're missing:
1. Instant startup. The 300D takes four or five seconds to turn on. Just about everything newer than that, even the entry-level bodies, turns on more quickly than your brain can perceive. Basically, if you don't turn the switch off, it feels like it's always on because it comes to life as soon as the shutter button is half-pressed.
2. Near-instant writes. Several seconds to write an image to the card so you can see the photo you took vs ~1 sec.
3. UI updated in a million different little ways
4. Better, more sensitive, faster autofocus with more AF points.
5. Able to shoot more frames per second
6. Much better LCD to review your photos
7. Live view (so you can see what you're about to shoot on the rear LCD, which is convenient if you're shooting at a weird angle or need to zoom in for absolute perfect manual focus)
8. Video mode
9. Can use more recent memory cards that are faster and have higher capacity
10. Network connectivity so you can send photos from your camera to your phone
