Maybe get a Canon EOS RP with an EF adapter and a Canon EF 85mm f/1.8 to get you started. Then when you can justify the expense you can upgrade to a 70-200mm f/2.8 or one of the more pro level primes.
Also consider increasing your budget and buying a Fuji body and an XF 56mm f/1,2 R. It will cost more now, but you'll spend less on upgrades. For example you can get the top of the line 55-140mm f/2.8 for around 1500 EUR, but the equivalent Canon will cost you around 2200, or 2900 if you go with the RF version.
Also, do you have a separate budget for lights? Garbage in, garbage out. You can get the most expensive camera and lens in the world, but if the light is garbage your image will be garbage. If 1500 is all you have, maybe spend it on better lighting and
