I just saw your silly claim about "no DoF at f/11" and thought to shoot it down for good.
Large format provides the easiest example.
But it's not the only one.
200mm (on full frame) is considered a good portrait length, and a 500mm on 6x7 will provide plenty of separation at f/11.
Also, you chat like a total nophoto when it comes to separation. Separation is a distinct difference in focus/sharpness between subject and background, to draw your eye to the subject. It's NOT total obliteration of background into an amorphous cloud.
And there are many ways to achieve separation, ranging from just enough of a difference to draw the eye to the subject, to total annihilation of background.
Aperture is only one of them. Choice of background is another. The ration of camera-subject to subject-background distances is yet another way. Camera movements is another. Soft focus lenses another. Special filters and diopters another. And so on.
If you think an f/11 aperture is stopping you from providing a separated and "captivating" portrait, you have bigger issues.
As a sidenote, even with 400iso film, you'd be limited to f/11 during a sunny day with most medium format (leaf shutter) cameras.
If you think there has been no decent portrait ever shot in daylight on TriX with a MF camera, there's no point trying to reason with you.
