Hey anons, person who was asking about museum photography/ordering a DSLR for exhibits to then return, you can see the main chain here

Something i'm not clear about is what Exposure compensation actually does in practice in the AV mode, is that actually messing with the way the image is captured in the same way changing the ISO or fstop and such would, or is it merely a postprocessing brightness tweakuing? If the latter how does it differ from the auto lighting optimizer I similarly don't understand what "picture style" and "metering" really does or how to use it to my advantage
I think the two most important questions I have though is:
1. Is there a way to use a custom white balance that doesn't require sampling a blank white image takeen in the same light and just lets me pick a color tempature value manually? Like daylight is 56000k or something, can I just pick 48000, etc.
2. How can I garunteee consistent brightness levels? Sometimes even when I take a photo with the same iso and fstop and compensation, of the same subject, it decides to change the shutter speed(?) which changes the brightness. I don't reallly understand shutter speed muich, but I tried switching over toi manual and then even if I adjuist shutter spoeed manually, changing the iso or fstop then leads to huge differences in brightness.
\ can I lock a shutter speed value in in AV mode?
