Sensor size does matter, but not for any of the reasons you are stating.
As pixel diameter approaches the wavelength of light, the photon's super position changes as the wave function collapses. if the pixels are smaller than the wave length, the chance of it's position entering an adjacent pixel, outside its average position, increases. As pixel size increases the likelyhood of multiple photons of different wavelengths entering the same pixel increases. both of these would cause distortion, especially when magnified to visible proportions.
the only way to increase mp past a certain limit is to increase sensor size.

Most cameras are already somewhere in this range, and it's all a trade off for different spectrums as to how accurate your pixel positions will be.
