We accept taking a resolution hit in order to be able to capture three different color channels at the same time because we usually shoot moving subjects. But telescopes usually shoot things with no perceptible motion, so you can just take multiple exposures through different filters and get the full resolution of the sensor. Also that way you can have way more different filters for different wavelengths than just three visible ones.
