Digital sensor sizes are based on the diagonal length which is just the diameter of a circle. it would be waaayyyy too expensive and dificult to make a circular sensor to match the lenses

Trying to mimic the human eye with sensor size, or with a picture frame in general is completely retarded.
There is only one half-decent way to mimic how the human eye sees, and that's 360 photography in VR.

A photorealistic 3D model, even if you are forced to be static in one place, that can be enjoyable.
Mostly to be able to focus your sight on more stuff than what's in focus in the picture

It's indeed very difficult to utilize well, but it's the closest you can mimic the human eye with photography.

I don't know about you but I can't see 360 degrees around me. I suspect you can't either. so I don't see how this makes any sense.
