If your focus is on the person, not the person AND their surroundings, then a buttery smooth wash of colour can look great, and having an f1.4 equivalent option means you can get great image quality in low light; ibis can't fix this, mft doesn't have f1.4 equivalent lenses, the only option is to go with a big sensor and fast lens.
As you already stated IF I want to match DoF, then I'd need to stop down and lose the noise advantage, but i'd still have the resolution advantage and noise would be ~equal. FF gives you EVERYTHING MFT has, and more, and that's never going to change.
