DSLRs became huge because they had to keep the same flange distance and, with nobody manual focusing anymore, they had to be equipped with every single autofocus standard that mound had ever had to ensure lens compatibility. Look at Nikon's screwdriver autofocus as an example.
IMO most of the bulk was just bad & cheap design philosophies.
Circuit boards can be made thin, sensors don't need to be on the motherboard, shutters can always be made smaller. Screens are super thin devices with little bulk in circuitry involved, even back in the 2000s. You don't need a huge grip to have a comfortable grip.
When Canon and Nikon dominated the game, they had no incentive to change and be more "space efficient". They still don't really care about that, I believe no manufacturer does anymore except for the m43 folks.
Sony's A7 was pretty tiny, but they gave up on that and just made the cameras bigger with time.
I quite liked the Canon 100D/SL1 when it came out, felt like they were trying to downsize their cameras for a moment, then they just gave up on the idea.
