I heavily customized my smallest boat to get me to all sorts of secluded places. I can keep my gear charged indefinitely even at night, and run in as little as 10 inches of water since I moved the CG forward and raised the motor. It's still fast though... faster than stock actually, since I have the anti-ventilation plate at the perfect height and angle when lowered all the way.
Aside from a prop guard and alternator I also added solar, GPS, radio, automatic bilge pump, air compressor, multiple outlets including USB, front and rear lights as well as underwater lights so I can see rocks at night. Also a bunch of dry storage, wheels, dashboard, a nice Warn winch (took it apart and installed the controls and remote outlet onto the dash), folding towing bar, oar clips, floor boards, and a few other things. One of which is cool as shit but I don't want to say. All foamed in so it will still float if swamped.
Everything is aluminum and stainless, with 8mm polycarbonate housings for the underwater lights so they'll bounce off any rocks no problem at all. It's served me well, getting me into spots that would take hours of hiking to reach. I still have a few more things left to do. It's skirted in ghillie mesh now and has flappy light covers so there aren't any reflections making it really hard to spot on a shoreline. When I get home, I just drop the wheels and run the winch line to my garage and let it pull itself inside as I carry stuff to the house. When I'm out, it can portage itself 100 feet at a time. I'll use the winch to pull my case of food up into trees too. The wiring is fused at both ends including a master fuse at the batteries. It all has 2 feet of slack and is accessible for quick repairs, and the whole thing is built around 2 wrench sizes.
