OP can't really go wrong with either systems, but if he's looking for more videocentric he should go for Panasonic. If he's looking for a better autofocus system he should go with Nikon.
Don't see why he would be chosing one system and then adapt MODERN lenses from another system. It's a different story if you have some old Nikon glass and want to stay loyal. And Z lenses are generally pricier and heavier. Lumix has 1.8 primes that are very competitively priced and have good performance. No bias here, just fact and I don't even own Lumix. Reviews are readily available on the internet. S5 also doesn't have AA low pass filter so even if you argue that the glass is worse the imaging will still be sharper than Z5. But that does mean there will be aliasing and moire in video and have to be mindful of that.
Z5 has better EVF, S5 has touch pad AF thru viewfinder, S5 has High Resolution Mode, S5 has swivel screen Z5 is tilt. S5 has 6K photo and Post Focus features. Z5 PDAF AF without apparently the banding issues. S5 High ISO sure seems to have better quality, DFD Contrast AF avoids weird banding issues when pushing RAWS up in extreme situations. S5/S1/S1H sensor is BSI and Z5 sensor is not. This means better low light and better DR. AFAIK, of all the ~24mp cameras out there, the S1/S5/S1H is the best performing for LL and DR.
I believe the non-BSI sensor can be more prone to rolling shutter too, if that's a factor.
If you played with any of the files I personally find SOOC camera colours of Z5 too magenta - easily corrected of course but more work needed.
If we were talking launch prices I'd might even be inclined to suggest Z5 more. But since we're talking seriously underpriced S5 bundles, it's honestly a no brainer all things considered.
