Manual mode

I knew of nothing of professional non film cameras until recently. I've been shooting on a shitty kit lens for the Nikon d3500. I've found that the best way to take photos is manual and all I do is make sure my exposure is correct and then I make sure I'm in focus. I've taken photos in pool halls as well as bright sunny parks. Since I'm still new, I ask , why is auto or P even a thing ? These modern dslrs and mirrorless cameras make taking a correctly exposed and focused photo uncomfortably easy. In low light which scares many , I still find it easier to use manual settings than fight my camera deciding to not take photos on P mode. Why do even "pros" use auto? Just use a phone at that point. I'm living on hard node right now because I cant afford a prime and I'm still scraping by in terms of my progress. Why are people using auto? I'll provide examples of my recent work for context.
