Literally don't even know what you're talking about.
Due to the single chip sensor with a bayer filter it never even captures full 4:4:4 RGB information to begin with, so saving 4:2:2 JPEGs is a non-issue.
Further, these are 1024x768 images from a 12MP camera. You could have downsampled and saved 4:4:4 JPEGs. The effects of chroma subsampling effectively vanish once you scale down enough (4K to 1080p, 12MP to 3MP (and you went below 1MP here) etc) so that's not it.
What makes point and shoot cameras shit is the lack of RAW support. You get what they give you, and they're not giving (You) their best. A point and shoot is simply a commitment to shoot with Canon's presets and above all else the single most important factor is they're not designed to be accurate. They do not resemble the real world scene, they are inaccurate usually over saturated and with non-linear curves applied which make them a useless tool for anything but snap shots.
I don't know about your particular model but for a lot of Canon P&S cameras you can use CHDK which is a hacked firmware. You can get RAW photos and sometimes full manual control but will have to shoot with a clunky UI that's not suitable for daily use.
If Canon were to release point and shoots in their compact form with manual controls and RAW support they'd obliterate their entry level DSLR market and considering they have left the high end and are now ONLY manufacturing and developing mid grade DSLRs going forward, they will definitely never do that.
Smartphones have taken over. Rightfully so, because P&S cameras were gimped on purpose to never be capable of taking accurate photos by design. The hardware (sensor and optics) are great in P&S cameras over $200 but the firmware is mutilated shit made to only ever deliver JPEG to entice you into buying a more expensive camera.
