With an OVF you shoot for "good enough to not be fucked in post", with EVF you instinctively get the exact exposure you want from your end image, and with tools like zebras you *know* of you're going to be fucked in post. It also removes chimping, ensuring you get the shot more frequently and have a more fluid creative process.
It's especially useful for creative use of flash, as no amount of metering is going to know how much contrast you want between near and far objects. Now I can set my BG EV, set my flash to meter off my subject and get the exact look first time.
EVF's help remove the "trust the technology" step in photography. The only OVF I think IS more appealing, is the ones on my medium format cameras (and not the 645 versions), as they feel a lot more compositional as you're seeing depth compression so much further removed from human vision, which is very similar to full frame.
I also don't think I've ever met a real person that didn't think EVF's helped make photo more fun.
