Used Olympus E-PL7 or E-PL8.
I find a lot of these bad boys basically new for 150-200 euros on OLX here in Portugal. I also find the Lumix 20mm f1.7 (any version) to be a steal, such lovely rendering.

1. Lotta cheap quality primes
2. 16 megapixels will render anything a beginner photographer will require.
3. They have great IBIS
4. They're small, so you can carry them all the time
Used Fujifilm X-T10 (My first good digital camera)
Autofocus sucks but this will do the job.
The "Fujicron" F2.0 lenses are such a delight.
Basically Any Nikon D3X00 body.
Nikon is kind of an expensive system, although the AF-D lenses are a bargain now, many of the cheap cameras out there with the good sensors can't use them with autofocus. It's an option, I wouldn't go with them but they do take great pictures.
Used Canon 60D
Great camera if you can find it for this price, along with a 50mm f1.8 stm it's quite a good setup. You could stick with the camera until the shutter gives out and never notice a need to upgrade.
The benefit of EF lenses is that they work flawlessly on Canon's mirrorless cameras with that 100 Euro adapter.
I guess the 16+ Megapixel Sony NEX bodies. (5, 3, C3, 7, 5n, ...)
I hate the old sony menus though and those cameras are menu heavy. Not many cheap lenses that are worth it in my eyes.
Personally I'd hunt for an NEX 7 if this is the system you choose. You can often find them for 250 listed, maybe with a bit of haggling you can get the price down .
Please don't feel the need to upgrade to full frame just because the sensor is big. You will outgrow bokeh rather quickly and the lens size is stupid compared to other sensor sizes. Only go to full frame if you want cheap wides (24mm to 35mm range).
