I'm new to photography and want to take some nice shots on my holiday using a Sony camera. Can I rely on it giving good SOOC photos similar to what a fujifilm camera could do? I don't want to worry about it messing up all my photos and I'm also not experienced in editing (and I don't really like editing in lightroom).

Yes, it's a modern camera that takes pictures, they're made to make good looking JPEGs
You can always tweak them a bit if you want before, I believe Sony has a good system to make your own presets

Yeah, it will have good auto mode, but you still need to guide it a little. Open creative styles in the menu and choose the one you think looks better. You can modify them a bit to raise/lower preferred contrast, saturation and sharpening that camera is to apply by default. Also when shooting jpeg with auto exposure keep in mind that camera just wants to make overall image gray, use exposure compensation to make image darker or lighter according to your preference.

In either case your SOOC jpegs will be quite awful. Fuji colors are faded and xtrans murders tonality and fine detail without a special snowflake ultra-slow demosaicing algorithm only found in some raw processors. Sony colors are as displeasing as possible but very accurate (your eyes have a multi-auto-WB function with advanced hue shifts and subject-specific rendering, cameras do not), so you need to spend ten minutes shooting tests while fucking around with picture profiles and color depth. Unfortunately, sony camera noise reduction is also terrible so you will be limited to shooting small jpegs in low light.

have you considered a nikon?

Nikon's 28-75 is a rebranded Tamron first gen with a $200 markup when Sony has the updated version. That tells me all I need to know about getting a Nikon camera.
