It's indoor tool. If you still wish to do it, only option is waking up early and going outside in the early morning when wind is calm. And even there, you may need to use screens and special rigs that keep everything still. There are autists that do that, so I'll not hold it against you, if you go into that.
For the flowers, you shouldn't need to focus stack them, like ever. They're bigger than bugs, you can just use smaller aperture, or even shoot from a larger distance with crop in mind.
