I've only used the gopro10 for a 3 hour hyperlapse driving from the Dolomites to Venice in Italy and I think I used it to film a set of speeches (I don't do video, this was for my own experimentation). I don't do any extreme sport etc, so it's just there. I may get a max lens so that I can utilize it as an on camera camera to film bts. I guess the bonus is that it's quite a bit more rugged than the 360's and Pocket. Also waterproof is a bonus, though I've not found a need for it yet!
The 360 was really niche, but I used it mainly when doing creative stuff and group photos. I've also walked around with it on it's selfie stick to do some "vlogging" while doing some photography. Great to recompose in post, so I didn't need to worry about framing as much as I would with the pocket. I nearly picked up the one inch 360 model, but ended up not doing that. Also to add, my battery somehow corroded inside, so I can only use it when powered with an external bank, so maybe this is a reason I don't gravitate towards using it as much.
And the Pocket is a great little camera for smooth silky b-roll. It's quick to power up, easy and light to hold and the gimbal does a real good job. It could be used as a main camera too, I don't doubt it's performance.
I think the Pocket does best in challenging lighting conditions and gives a better picture. Also if you get it with the creator combo, you can pair it with a mic that's not too bad, but may be worth investing in a better one at some point if audio is CRITICAL, i.e interviews
