How to meter landscapes on DSLR?

How do I become a god at metering exposures on landscape shots. Just came back from a trip, and saw that in a lot of my pictures the sky is blown out.
I've tried googling, but couldn't find anything useful, only "look at your exposure on the LCD and adjust lmao".
I want to be able to basically not use my LCD if possible. People were able to do it on film, so it should be possible on DSLRs as well.
Do you have a system or method to avoid blown highlights? I've been using matrix/evaluative metering so far. I basically just want to make sure that the highlights are never blown. Is there a way to make sure that highlights aren't blown without underexposing too much?`
