Remember Polaroids? Polaroid cameras were fun because you could see your photos instantly, you didn't have to wait to get them developed. This is the same idea. Polaroids have kinda stuck around in pop culture as a novelty and people still like the idea, Instax is the same thing and they have an extra layer of novelty to them because there's an entire generation of young people who only knows photos as things on a screen but they see polaroids in movies and cartoons and for them it's got a cool factor for that reason. For older people it's nostalgic. Sure the cameras suck, but so did polaroid cameras.
FYI, you don't have to use the shitty cameras. Fujifilm makes an Instax printer, it uses the same photo sheets and you can shoot with whatever camera you want. I have one and I use it for printing photos to tape into my hobonichi techo.
