I have a Nikon F5, and usually just focus and recompose with the center AF point, but I never shoot long bursts of moving subjects because it's film and I'm not made of money. If I were a professional back in the 1990's and film cost wasn't as much of a concern, and I was shooting those types of subjects, I can see how the other 4 AF points in the viewfinder would be useful to me.
Once the pro cameras had multiple AF points, then it became a selling point for "prosumer" camera bodies, and as costs of more advanced AF modules kept coming down, they trickled down into consumer grade bodies, too.
This is my theory, anyways.
