An amateur might very well perform so much worse in front of such a big and intimidating camera that using an iPhone to make them feel at ease is worth the lower image quality.
Money might be better spent elsewhere, like lights, make up artists and props.
If you have to ask that question it's most likely you don't know the first thing about shooting video, so all these considerations are moot anyway.
