The comparison of "different guitars, amps and pedals being different colours a painter can use" is the most accurate way of describing it.
Every guitar sounds and feels different. You can have five of the same guitars, built by the same guy, 100% identical specs and there will still be a clear difference between most of them. Sometimes tiny differences, but sometimes very big.
They all make you play and sound differently and make you take a different approach.
It's also just fun to have a couple of different guitars, even if you're just at a hobby level.
I have seven guitars where two are the same brand and model, but have different pickups. I bought it as a backup to my main, but they compliment each other really well in a mix too. One has pickups that a slightly accentuated in the mids and a tiny bit hotter, while the other has a slight dip in the mids and a little weaker output.
Amps and speakers make a HUGE difference too. You can pretty much compare the speakers/cabinet to filtering an image because they act as a sort of global sound filter. Changing speakers will make one of the biggest differences in the overall sound.
I guess you can compare it to stuff like, you can have a little point and shoot film camera, a high end Sony with all the specs, bells and whistles, fixed lens vs zoom lens and so on. They all serve a different purpose, will make you work/think differently and give you a different result.
