production never scaled up to make them as cheaply and quickly as phones. the market is small and stubborn, and has had every single practical need met by full frame DSLRs starting with the canon 5div and nikon d800/d750 era. the economy of scale thing isn't exactly driving prices down with disposable chinese child slave labor and never will because almost everyone who needs a camera either already has one, or can buy an excessively sufficient one used.
imagine if phone consooomers were smart, realized the iPhone 8 perfectly serves everyone's needs, and apple wasn't able to forcibly obsolete it because the firmware was already simple and highly secure. or imagine if indian web developers were forbidden from using node js et al, almost no one would need a computer made after 2013. cameras are like that. just get something full frame, and mind older canon sensors because canon does not make sensors as well as everyone else.
