I’ve watched every episode at least twice except for maybe the Grizzly Smith episode. It’s pretty comfy background when lifting in my gym. Of course some of the serious ones like Benoit/Owen are good, but my favorites are usually the more ‘light hearted’ ones and some of the ones where I didn’t know the story front to back already. My favorites are

Brawl for All
Montreal Screwjob
Kanyon (Jim Mitchell makes the episode)
XPW
New Jack
Herb Abrams
Bruiser Bedlam
Bruiser Brody (Tony Atlas’ Shiek impression is my favorite bit from the entire series)

But realistically they’re mostly all good. Grizzly, Moolah, and Luna are kinda meh, but still worth a watch if you’re interested in them.
