To Vegeta, he had to defeat Goku as two warriors in battle. You really don't seem to understand the character that well. The entire reason the Majin Vegeta vs Goku fight was significant was because Vegeta FINALLY beats Goku, which was what he had wanted for years, but it came at a price. And it was that realization that helped him finally become a better man when he sacrificed himself to blow up Majin Buu, the first time in his life that he was fighting for someone other than himself (to paraphrase the quote from Piccolo).
That story arc does not work if Vegeta had defeated Goku during their first encounter in the Saiyan saga. Vegeta's inferiority complex, which is a huge part of his character, was birthed in that moment.
