See all the stuff about contact with the fans, taking their food/drink, bleeding on them etc. The stuff wrestlers aren't allowed to do is probably to stop the company getting sued for an unsafe working environment if someone gets brain damage off a chairshot, bucklebomb or w/e. They can say it was expressly against their rules and cover themselves.
Sad thing is it's going to discourage improvisation. Wrestlers are going to be worried they didn't discuss some spot with the coach beforehand.
