I've seen both so far.
The G1 has had higher highs, but much lower lows. Some of Bullet Club/House of Torture matches have been unwatchable. Chase Owens has nearly been protected better than Kaito has been and while Ren/Yota/Shota are trying, they aren't really ready to carry this thing yet.
We haven't seen as much of the Stardom Grand Prix since they are only doing 3-4 matches a show, but their average matches are better due to not having the comedy and interference/ref bump shenanigans. i don't think we are going to see as many strong matches out of it like we have with the G1 though.
