You literally can't melt cheese to make nacho cheese what kind of gimmicks are they pulling here whenever I try to make it I get greasy gooey shit clumps not a nice tasty delicious nutritious nacho cheese

they use emulsifiers like sodium alginate or sodium citrate. that's how home chefs and more upmarket places make cheese sauce, not sure what other shit they put into the factory-grade stuff.
