Because people who have actually been in fights realise there's a huge difference between something like MMA and an actual street fight.
Nobody is tough when they've been smashed in the head with a wine bottle. Or had their eyes thumbed out, or fishhooked, or had their balls pulled.
Organised and street fighting are totally different disciplines and being good at one doesn't mean you're good at the other. There are plenty of examples of professional boxers and MMA guys getting smashed up in pubs for decades.

This is delusional woman's self defense class tier thinking. Haku might be tough as shit, but he won't even be able to do those things that you're saying without getting within striking distance of Brock, and he isn't going to out strike a guy who has practiced striking with MMA coaches for years. Haku can adrenaline dump and charge Brock all he wants, unless his skull is twice as thick as a normal dude then he's still getting knocked the fuck out, or even taken down by the All-American NCAA championship wrestler. Hakus only shoot experience is as a sumo wrestler, and sumo wrestlers already got exposed in early MMA 25 years ago.

I hate wrestling fans who idolize the UFC while clearly knowing nothing about it. Brock Lesnar is not a skilled fighter, because there are no skilled heavyweight fighters. It's always been a freak show division, successful title defenses are rare and most recently the entire division has been taken over by a light heavyweight who decided he doesn't want to cut weight anymore.
Meng probably could kick Brock's ass. Cause as evidence by the UFC heavyweight division, these big lugs can train their ass off it their wins and losses still end up being a coin flip. In his last fight they let Brock use steroids, and this alleged world class wrestler couldn't even double leg takedown a career kickboxer.
