No one outside of Japan or autistic foodies knew who some random Jap that ran a sushi bar in a train station was until Jiro Dreams of Sushi. But the director put in the effort to help the audience understand that man so the audience became invested in why he was so autistic rice and fish.
Also his restaurant has gone to hell evidentially. All the new reviews are terrible and his son that he disowned for not making sushi the right way opened his own sushi bar and it is way more highly rated.
