I think you could also do a game like Pokemon Snap. You'd play as a journalist trying to catch the best pictures. Have cgi recreations of real classic matches like Andre vs Hogan, then the player can pick a vantage point or move around outside the ring. You can't interact with the match because it has to go down the same way it did irl but you still have to consider things like whether or not you're obstructing anyone's view.
