Kind of pointless, I think. The repetitious nature of Vince's booking and the all sizzle no steak mentality would become really obvious. There's no satisfying end point that comes to mind. Austin fades away. Rock runs off to Hollywood. Taker and Kane stick around. Foley gets on his meds, I guess, because Mankind and the others disappear. Mr. McMahon gets away with all his bullshit and becomes a billionaire.

Wrestling has gotten too fantastical and goofy for an anime depiction of it to stand out especially if it's just adapting iconic wrestling storylines. It either would have to turn into a character study or something stupid like the wrestling isekai.
