Bleeding is necessary for intensity and value, but you gotta know when and how to use it otherwise it ends up being detrimental to the experience in many ways, take Austin vs Bret at wrestlemania being an absolutely fantastic lesson on how to bleed and make it fucking iconic, making everyone involved looking better once it's done. Yes I know Bret is kinda cheating because he's exceptionally good but there's other examples like Triple H vs Cactus Jack 2000, another fantastic match elevated even further by apropiated use of color.
As for what happens when you do it wrong, look no further than hardcore indie shitters, or even when it's done correctly if it happens too frequently it also turns bad see these last 2 weeks of AEW for an example of that.
