Sometimes they're told to go out there and do a "special spot" where they might have to coordinate together because wrestling is expected to be spectacle. Those are scripted. Sometimes mistakes happen doing those moments or someone misses a move -- those are what are known as "botches."
But they're really fighting for the most part.

I've seen it happen before even semi-realistic CGI was really a thing, like before T2 and Jurassic Park so I believe it's real and not AI generated or holograms. Some camera trickery might be involved though
