I will make a case that Tiger Mask I/Sayama is one of the most influential and important wrestlers ever. He spearheaded the "lucharesu" style as well reinventing junior heavyweight action. He would then go on to create the UWF and start shoot style (with others of course such as Maeda, Fujiwara and Takada), which lead to the MMA boom and ripple across the world.
